Black Bean Soup
Ingredients:
one onion
two garlic cloves, minced
two celery ribs
one quarter large red bell pepper,
two small chicken bouillon cubes
one and a half cup of boiling water
two cans of black beans, undrained
half a tsp of salt
half a tsp of cumin
half a lemon, juice of
one and a half tbsp cornstarch
Directions:
With a pot, mix the first 6 ingredients, and allow for ten minutes of simmering. Add half a can of beans, cumin, and salt, and then cook for five minutes. Puree soup. Add remaining beans to soup, and combine cornstarch with one and a half tbsp of water. Toss lemon and cornstarch into the soup, and cook to ideal thickness. Enjoy with the bread of your choice.
